A pan can go from cooking normally to smoking in the time it takes to answer a call, help a child, or step into another room. To contain overheating pan hazards, the first goal is not to save dinner. A Class B or multipurpose ABC fire extinguisher can be appropriate for a small fire if you know how to use it, have a clear exit behind you, and the fire is still contained. If the fire is spreading, smoke is building, or you are unsure what to do, leave immediately, close the door behind you if possible, and call 911 from outside. Property can be replaced. People cannot.
Electric Cooktops Need a Different Kind of Attention
Gas flames make heat visible. Electric cooktops do not. Radiant glass, exposed coil, and induction cooking surfaces all require different habits, but each can contribute to an overheating event when cookware is left unattended.
With radiant and coil burners, residual heat is a major concern. The element can stay hot long after a knob is turned off, continuing to heat cookware and nearby materials. A pan that appears under control can keep smoking after the cook thinks the risk has ended.
Induction cooktops heat the pan directly rather than the surrounding surface in the same way, but they are not risk-free. An empty compatible pan can still become extremely hot, and oil can still ignite. Avoid placing mail, paper towels, oven mitts, packaging, or plastic items near or on the cooktop. On a glass electric surface, even an item placed on a recently used burner can melt or ignite from residual heat.

The best safety advice has to work on a busy Tuesday night, not only in a perfectly quiet kitchen. Use a timer whenever food is on the cooktop, including when simmering, preheating, or heating oil. Keep the timer with you if you need to step away, rather than relying on memory.
Match the pan to the burner. A small pan on a large element can concentrate heat and overheat its contents quickly. Use medium heat when preheating cookware unless a recipe specifically calls for higher heat, and avoid preheating empty nonstick pans.
